  • ½ cup freshly shredded sharp Cheddar cheese
  • 1 (9-inch) frozen unbaked deep-dish piecrust shell
  • 7 eggs
  • ½ cup milk
  • Salt  & Pepper to taste
  • Pinch of sugar

  1. Preheat oven to 350°. Brown sausage in a large skillet over medium heat, stirring often, 8 to 10 minutes or until sausage crumbles. Remove from skillet and drain.
  2. Sauté onion, minced garlic, spinach, tomatoes, mushrooms, and bell pepper in olive oil over medium heat 5 minutes or until tender. Stir together cheese, sausage, and sautéd vegetables. Place piecrust shell on a baking sheet, and spoon mixture into piecrust.
  3. Whisk together eggs, milk, salt and pepper and pinch of sugar in a bowl until smooth; pour over sausage mixture in skillet. Cook mixture over low heat, stirring constantly for 2 minutes and then pour into uncooked pie crust.
  4. Bake at 350° for 20 minutes or until golden brown and the filling is set. Let set for about 5 minutes, serve with fruit. Freezes beautifully for later enjoyment.
