Fresh Summer Tortellini Pasta Salad


  • 1 lb       frozen or fresh cheese tortellini
  • 1 cup    broccoli flowerets
  • ½ cup   sliced red onion
  • ½ cup   sliced gr. bell pepper
  • ½ cup   sliced black olives
  • ½ cup   halved cherry tomatoes
  • ½ cup   artichoke hearts
  • ¼  cup  parmesan cheese
  • 2 cups favorite Italian Dressing

Bring 4 qts water to a boil. Add tortellini. Cook for @ 8 minutes. Strain and cool. Add all ingredients into a large mixing bowl, toss and let sit in fridge. Serve as side dish or place on large plate or bowl and top with Grilled Chicken Breast slices, Sautéed Shrimp, or chilled Cocktail Shrimp.
