Mandi Buckalew opened Cakeapotamus in 2013, after battling and defeating thyroid cancer. She opened up the bakery as a way to start a new chapter in her life.
In order to open up shop, Buckalew quit her job as a teacher, and focused her time and energy on what makes her the happiest, baking and decorating.
Buckalew said her corky designs are a reflection of her personality. Her business inspiration comes from how others treated her, while she battled cancer that encouraged her to stay true to herself and pursue her dreams post-cancer.
“People let you get away with a lot, and that was very empowering for me. So, going through that, I was like I don’t care about what anybody thinks, I’m going to put the things I love here,” said Buckalew.
